Vinification
The grapes are harvested by hand, selecting the perfect ripening bunches. The fermentation takes place in stainless steel vats, at controlled temperature to save primary aromas; after 8-10 days all the sugars are converted into alcohol. To extract the color and the aromas, the skins that raise to the surface are moist with the must/wine. The maceration of the skins continues for 15-20 days, then the free run wine is separated from the marc, which is pressed. Follows the ML fermentation on fine lees for 20 days, to make the wine softer on the palate.
The wine ages in small Tuscan oak barrels for 24 months. The wine is then aged for 6 months in the bottle before release.

jeb dunnuck logo 250"The 2019 Chianti Classico Riserva is slightly deeper ruby-hued and brings a touch more density and depth, with ripe black and red fruits, savory Mediterranean herbs, spicy wood, and graphite-driven aromatics. It's rich, medium-bodied, and concentrated, with ripe tannins and a great finish. Aged two years all in oak, drink bottles through 2031."

"Balsamic glaze with a certain meatiness shows on the nose of this wine, along with soil, cherries, rose petals and bitter orange jam. The palate offers more cherry plus oaky notes of vanilla, milk chocolate and spice. Tannins are easygoing but stand at attention, ready for sipping right now. - Danielle CALLEGARI"
