Zanon Cabernet Sauvignon is a medium-bodied with dark red color. Dark ripe berries dominate the aromas and flavors mixed with the earthy dried herb nuances. This true Bordeaux blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, and Malbec can be enjoyed upon release or aged up to 7 years.

The vineyards for this estate fruit are located in the northern part of the historic Dry Creek Valley. This pedigreed region has long been known for great vineyards and wines. The vineyards unique combination of soil, sun, and fog help these Bordeaux varietals develop exceptional ripeness, flavor, and acidity.

Vinification
The 2017 growing season began with plenty of rain followed by warm temperatures. Superb weather conditions during harvest allowed the grapes to reach full ripeness with balanced acids. Harvest ended the last week of September.
The grapes were destemmed and cold-soaked for 48 hours. After inoculation with the Bordeaux yeast strain, fermentation occurred in stainless steel tanks where the juice was gently stirred and circulated to maximize the flavor and color from the skins. Once fermented dry, the new wine is pressed and stored until barreled in the winter months.
Ageing: 15 months in American oak combined the 35% new French oak barrels
