The vintage brut is 100% Grand Cru Chardonnay from the chalky soils of Chouilly.
This Champagne is full of elegance and finesse. Very complex nose, with a bouquet of aromas dominated by honey, brioche and notes of dried fruits, hazelnuts and sweets. Perfectly matured.
It matches magnificently with foie gras!
Showing a light-yellow hue, the all Chardonnay Grand Eclat is dry and crisp, the perfect bubbly to accompany oysters on the half shell, as we did. Fine bubbles with outstanding depth and sense of refinement. Sourced from Chouilly and Enracines and aged 6 years sur lattes. Disgorged January 2022. Good value."

And very good it is, with some age after six years on lees while still having freshness, crisp acidity and a tight, steely edge. "Cool and pretty notes of petrol, yeast, citrus rind and apple complement the equally yeasty medium-bodied flavors that are rich, complex and dry without being especially austere. This is definitely a full-flavored and generous blanc de blancs that is satisfying if not as crisp as the blanc de blancs designation would suggest. On the palate, it offers ripe citrus, rich apple in butter pastry, and an uplifting note of lemon curd with lovely mid-palate depth, fine effervescence, and brisk acidity that provides a successful counterbalance to the richness of the fruit.
