"The 2017 Fleurfontein is pure Sauvignon Blanc, vine-dried (whereby the stems are pinched), fermented by indigenous yeast in Hungarian and French oak barrels and left to mature for 18 months in 50% new oak. There is around 230g/L residual sugar. The nose offers attractive acacia honey, fig and quince aromas. The palate is very pure and viscous, featuring plenty of mandarin, tangerine, apricot and fig notes, but crucially, there is a fine bead of acidity that maintains tension and race all the way through to the finish.
